Sweet Potato and Spinach Wraps


Take 2 tortilla wraps, a small sweet potato, a bowl full of fresh greens,
and some sour cream.

Slice the sweet potato, brush with olive oil and seasoning (fajita type is good) then steam or bake til soft.

Rinse and chop some baby spinach, basil, rocket and spring onion, fresh from the ground.

Pile into the tortillas with a dollop of sour cream.


 (And people say vegetarian food is boring?)
